Peanut Butter & Chocolate Chip Cream Cheese Cookies

Ingredients : 1 can seamless crescent rolls (or pinch together seams on a regular can, or make your own with the recipe I posted before) 8 oz cream cheese, room temperature 1/3cup sugar 2 tsp vanilla ¾ C mixed peanut butter and chocolate chips Directions : Beat sugar, cream cheese and vanilla together until smooth and creamy. Unroll the crescent roll sheet onto lightly floured surface. . Stretch the dough out, I use a rolling pin to do this, then trim the edges to give it a good rectangular shape. A pizza cutter is great for trimming edges of dough. Spread the cream cheese mixture over the top of the crescent sheet, leaving a gap at the edge about 1/2 inch. Sprinkle your chips on top of cream cheese – press them in lightly to aid in rolling.  Roll the crescent sheet up tightly and wrap in cling wrap. Ingredients: 2 1/4 t. fast acting yeast or 1 pkg Fleischmann;s Bread Machine Yeast 1/4 c. warm water (105-110F) 2 t. sugar 1 c. milk (just to scalding - do not simmer or boil) 1/3 c. sugar 1/4 c. butter 1 t. salt 1 egg, lightly beaten 3 1/2 c. bread flour  1 c. whole wheat flour 1 c. wheat gluten (optional) 2 T. butter, melted for brushing Directions: Dissolve yeast in 1/4 c. warm water.  Stir in the 2 t. of sugar.  Let it sit for about 5 minutes until mixture foams up.   Heat milk in microwave or in small saucepan on stove top. Add sugar, butter, and salt to hot milk and stir until butter is melted.  Cool to 105-110 F Pour milk mixture into bowl or stand mixer Add the yeast mixture, egg and mix together Mix in all-purpose flour, whole wheat flour, vital wheat gluten beating to form a soft dough.  Knead with mixer for 5 minutes, adding extra flour, if needed. Pan-Roasted Chicken with Lemon-Garlic Green Beans

Pan-Roasted Chicken with Lemon-Garlic Green Beans (from Rue) 6 TBL olive oil 2 lemons, 1 thinly sliced, 1 juiced 4 cloves garlic, minced 1 tsp. salt 1 tsp. freshly ground black pepper 1 lb. trimmed green beans 8 small red potatoes quartered 4 chicken breasts (bones left in, with skin) Prep: Preheat oven to 450* F.  Coat a large baking dish or cast-iron skillet with 1 tbl. of the olive oil.   Arrange the lemon slices in a single layer in the bottom of the dish or skillet.   In a large bowl, combine the remaining oil, lemon juice, garlic, salt and pepper, add the green beans and toss to coat.   Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices.  Add the potatoes to the same olive-oil mixture and toss to coat.   Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans.   Place the chicken...

Peanut Butter Balls

Ingredients : 2 lbs Peanut Butter 2 Sticks Oleo (Butter) 3 C. Rice Krispies 1 1/2 lbs Powdered Sugar Paraffin Wax 6 oz Chocolate Chips 8 oz Hershey Bar Directions : Mix 2 lbs Peanut Butter, 2 Sticks Oleo(Butter) with 3 Cups Rice Krispies. Add 1 1/2 lbs Powdered Sugar - mix well. Roll into small balls - approximately 1" in size and place on wax paper. Melt 1 bar of paraffin wax and add 1 (6 oz.) package of Chocolate Chips and 1 (8 oz) Hershey Bar. Make sure it's hot and dip balls into chocolate.  Put back on wax paper and let them set up.   TIPS : ~*~*~Best when refrigerated - can also be frozen. ~*~*~ ~*~*~For an extra touch wrap in small pieces of aluminum foil.  ~*~*~

All Aboard!! We need more people on the Coupon Train!!

A coupon train is nothing more than an envelope full of coupons that has a list of addresses included with it.  When you receive it you would take the coupons out that you want/need and add in the ones you won't use.  Then you would address it to the next person on the list.. If you would like to be added onto a train (there are 3 running at the moment) I will be more than happy to contact those who have the train and you can be added onto it!  All I need is your mailing address. 

My New Coupon Binder... err Book!

Remember my last post where I told you that my husband and I made a "binder" ourselves?  I guess you can call it a binder or a book, but I call it AMAZING!  We took zip ties and placed them through my coupon pages and locked them together.  With mine I needed 2 ties instead of one because my book is so big!  As I said in my last post I cannot find a durable binder ANYWHERE!!  I am so tired of shelling out money for binders that break, tear, etc.  With this the pages will give out way before the zip ties!  Not to mention the ties only cost $5.99!!  If you have been buying binders like I have then you know what I am talking about.. Coupon Binders

I started couponing with envelopes in a shoe box, but I had every category imaginable.  This didn't work for me once I filled up the envelopes.  I knew I needed something bigger so I bought a Mead Five Star binder, but it was only 2" so it wasn't long before I needed a larger one.  I then purchased a 4" Case-It binder from Amazon, but I was very upset when the fabric tore after only 2 weeks; the company did replace the binder, but I don't trust the brand is durable enough to coupon with anymore.  I cannot coupon efficiently if I can't get to all of my coupons at once; so last night my husband and I bore a brand new idea for a coupon "binder/book!"

Don't Hoard the Papers, Please!

I normally only buy 6 Sunday papers, but today I bought 10 since Walgreens had some coupon inserts missing from some of theirs! I purchased 5 there after looking through the papers to ensure that I was getting the inserts (I scored 15 P&G's in ONE paper)!! I left Walgreens and drove over to Food Lion where I picked up 5 additional papers where I knew they kept the papers behind the counter intact; although I did pay 70¢ MORE per paper I had the reassurance that all the inserts were in place! ~ *~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~ Remember my trip to Walgreens?  Well, while I was there trying to get my Sunday Paper there was a lady going through the newspapers in a cart off  to the side who tipped me off to the missing inserts. Anyway, she was hoarding the papers and even got mad at her husband for offering one of the papers that she said was missing ads and told him not to give anymore away! Coupon 101

Okay, I have been working on a virtual coupon class for the last few hours over at www.weusecoupons.com!  It is definitely worth the read!  Did you know Walmart is MORE expensive than Kroger, Harris Teeter, Lowes Foods, Food Lion, etc?  Why?  They don't offer sales since they don't have to worry about customer loyalty.  Other stores have Mega Events, Double Coupon days, Triple Coupons, etc to get customers to come shop their store(s)! I have read numerous comments about the show Extreme Couponing and although I understand what people are trying to convey; it still doesn't make sense.  Why wouldn't you want a stockpile in this economy?  If a wage earner in your immediate household was to lose their job tomorrow could you make it?  Most stockpilers try to have 3-6  months of food on hand in case something happens.  One interesting thing I did learn tonight was there is a difference between hoarding and stockpiling - hoar...
