Pan Center Cut Porkchops

4 Center-Cut Pork Chops, about 1" Thick
1 t. Dried Thyme
 1 t. Salt
 1 T. Oil

Sprinkle the thyme and salt on both sides of the chops.  Let sit for about 30 minutes.  Spread the oil over the bottom of a large iron skillet over medium heat.  Place the chops in the pan and cook slowly, lowering the heat if necessary.  Cook 4 to 5 minutes on each side.  Cover, turn off the heat and let chops sit for 8-10 minutes.
