Bar Harbor Cranberry Pie w/Amaretto Glaze



Ingredients:

  • 1 cup all-purpose flour
  • 1 cup white sugar
  • 1/4 teaspoon salt
  • 2 cups cranberries, fresh or frozen*
  • 1/2 cup sliced almonds
  • 1/2 cup butter, melted
  • 2 eggs ex large or jumbo or 3 regular, beaten
  • 1 teaspoon Amaretto or almond extract
    Glaze:
    • 1/2 cup 10x sugar
    • enough Amaretto to make glaze "drizzleable"


    Directions:
    1. Preheat oven to 350 degrees.
    2. Grease one 9 inch pie pan.
    3. Combine the flour, sugar, and salt. Stir in the cranberries,almonds, butter, eggs & Amaretto. *If using frozen cranberries, the batter will be very thick.
    4. Spread batter into prepared pan.
    5. Bake at 350 degrees for 40 minutes, or until a wooden pick inserted near the center comes out clean and top is golden brown. *If using frozen cranberries you will need to add about 10 minutes to baking time.
    6. Let pie cool a bit and drizzle glaze over top.
    7. Serve warm with whipped cream or ice cream.
