Bar Harbor Cranberry Pie w/Amaretto Glaze
Ingredients:
- 1 cup all-purpose flour
- 1 cup white sugar
- 1/4 teaspoon salt
- 2 cups cranberries, fresh or frozen*
- 1/2 cup sliced almonds
- 1/2 cup butter, melted
- 2 eggs ex large or jumbo or 3 regular, beaten
- 1 teaspoon Amaretto or almond extract
Glaze:
- 1/2 cup 10x sugar
- enough Amaretto to make glaze "drizzleable"
Directions:
- Preheat oven to 350 degrees.
- Grease one 9 inch pie pan.
- Combine the flour, sugar, and salt. Stir in the cranberries,almonds, butter, eggs & Amaretto. *If using frozen cranberries, the batter will be very thick.
- Spread batter into prepared pan.
- Bake at 350 degrees for 40 minutes, or until a wooden pick inserted near the center comes out clean and top is golden brown. *If using frozen cranberries you will need to add about 10 minutes to baking time.
- Let pie cool a bit and drizzle glaze over top.
- Serve warm with whipped cream or ice cream.
