Almond & Toasted Coconut encrusted Tilapia

2 Tilapia fillets, frozen... See More
1/4 cup almonds (slivered or finely chopped)
1/4 cup coconut (loosely measured)
olive oil
freshly cracked black pepper
salt (preferably sea salt)
Directions:
Preheat oven to 350
Spray baking sheet with PAM
Rub both sides of fish fillets with olive oil
Season to taste with salt & pepper
Dredge fillets in almonds
Place on baking sheet & sprinkle leftover almonds& coconut over top
Bake at 350 for 30- 35 minutes
Hawaiian Rice
Ingredients:2 cups instant brown rice
1 can pineapple chunks,* drain & set juice aside
2 baby carrots, finely chopped
2 scallions, chopped
1/2 bell pepper, diced
1 cup water
2 tablespoons teriyaki sauce, add more for a bold flavor
1 tablespoon soy sauce
freshly cracked pepper to taste
Directions:
In a large saucepan, with a lid, bring the pineapple juice, water, carrots, soy & teriyaki sauces to a boil.
Add rice & cover
Bring back to boi.
Turn off heat and stir in the scallions, pineapple chunks & bell pepper.
Cover and let sit until ready to serve... if it cools too much turn stove on low to reheat for a minute or two.
