Amish Style Spicy Bacon Potato Salad




Ingredients:
3# red potatoes; boiled w/skins on, cooled & large diced
1/2 cup reduced fat mayo
1/2 cup light sour cream*
1/3 cup Miracle Whip light
1 tablespoon horseradish
2 tablespoons chives (fresh is best, if you have them)
1 teaspoon salt (optional)
1 teaspoon black pepper
6 hard boiled eggs, diced
1/4 cup Hormel Bacon Bits
3 scallions, chopped


Directions:
Place all of the ingredients in a large bowl.
Combine well with a wooden spoon, being careful not to break the potatoes apart. 
Chill. 
Serve & Enjoy!


* I use plain Silk yogurt in place of sour cream to make this dairy free.
