Another Pot of "Ritzy" Applesauce!
Ingredients:
3# tart cooking apples, Macintosh or Cortland
1/3 cup water
dash salt
1/4 cup sugar (add more if you prefer a sweeter sauce)
1/3 cup cinnamon candies*
*I prefer to use 1 small cinnamon candy cane or a small handful of cinnamon pillows from the Ritz in Corry Pa.. hence the name!

Directions:
Put a heavy stock pot or large saucepan on the stovetop with water.
Wash, core and slice apples in half (do not peel) and place in the pot.
Sprinkle salt over apples, cover and turn heat to high. When water boils reduce heat to simmer.
Simmer until apples fall apart, stirring occasionally.
Remove from heat, use a fork to hold the peels against the side of pot and gently scrape the apple from skins. Discard the scraped skins.
Put pot back on the heat, stir in candies and sugar, cover and simmer until all candy has melted, stirring occasionally.
Applesauce can be served chilled or warm and freezes beautifully.
