Bacon, Spinach & Feta Pie



Ingredients:
1 bag (16oz) frozen spinach
1/2 cup crumbled bacon (I use Hormel in the bag)
1/2 cup Jiffy Mix (or Bisquick)
3/4 cup crumbled feta
1/2 cup chopped onion
1 tablespoon minced garlic
1 tablespoon olive oil
1 teaspoon Red Hot Sauce (adjust to your liking)
1 teaspoon garlic pepper
2 jumbo eggs
3/4 cup milk


Directions:
Preheat oven to 400.
Spray a 9 inch pie plate with cooking spray. 
Dump the frozen spinach into a large preheated skillet, cook over medium heat until it has thawed completely and looks dry. 
Add the olive oil, onion & garlic ~ saute for a minute or two.
Pour the mixture into a colander & squeeze out most of the liquid.
Place the drained spinach mixture into a bowl and add the rest of the ingredients. 
Mix well and pour into pie plate.
Bake at 400 degrees for 30-32 minutes.


Leftovers reheat well.
