Cauliflower Soup


This soup is made with orange & regular cauliflower, good for you, delicious.. it's super simple & fast cuz I'm going to give you my "cheater*" recipe! LOL :)


Ingredients:
1 head cauliflower
1 quart chicken broth
1 small onion, diced
1 package Pioneer Peppered or Country Gravy mix*
1/2 stick of butter
1 package shredded cheddar cheese
1 tablespoon chives
1 tablespoon Worcestershire sauce
1 to 3 teaspoons Red Hot Sauce
salt & pepper to taste
half and half or milk to thin soup if it gets too thick


Directions:
Clean the cauliflower and leave the florets in large clumps.
Pour the broth into a large pot, add florets & onion.
Cover & bring to a boil.
Turn heat down to simmer & cook until florets are just "mashable".. don't overcook or the cauliflower will disappear! Take off the heat and rough mash the cauliflower.
Sprinkle the country gravy mix* over top & stir it in well. 
Return to low heat, bring to a simmer and stir until soup thickens. 
Add cheese and seasonings.. simmer on low until flavors meld.
If soup gets too thick thin it with half & half.


*Pioneer Country Gravy pouches can be found at Super Walmart in the spice section but if you prefer not to use a packaged mix just make a slurry of flour/corn starch and water and thicken the soup with it. You will also need to bump up the seasonings.


To double this recipe just remember that for each head of cauliflower you'll need 1 quart of chicken broth, 1 pouch of white gravy mix & 1 bag of shredded cheese then adjust the spices accordingly.
