Oatmeal Fudge Bars


Oatmeal Fudge Bars... :)


Ingredients:
1 cup plus 2 tablespoons butter, softened, divided
2 cups brown sugar, packed
2 xl or jumbo eggs or 3 regular
5 teaspoons vanilla, divided
3 cups oatmeal
2 1/2 cups flour
1 1/2 teaspoons salt, divided
1 heaping teaspoon baking soda
1 can ( 14 ounces) sweetened condensed milk
2 cups (a 12 ounce bag) semi-sweet chocolate chips*
1 cup nuts, coarsely chopped*




Directions:
Preheat oven to 350
Cream 1 cup butter & brown sugar. Beat in the eggs & 3 teaspoons if vanilla. Combine the oats, flour, 1 teaspoon salt& baking soda, stir into creamed mixture.


Press 2/3 of oat mixture into a well greased 15x10x1 baking pan ( jelly roll size). Set aside.


In a medium saucepan, combine the milk, chocolate chips 2 tablespoons butter & 1/2 teaspoon salt. Stir frequently over a low heat until chocolate & butter have melted. Remove from heat, stir in the chopped nuts & 2 teaspoons vanilla.


Spread fudge over the crust. Crumble the remaining oat mixture evenly over the fudge.


Bake at 350 degrees for 25 minutes or until golden brown. Cool completely and cut into squares.




* Use any flavor chips and your favorite nuts... I used 70% cocoa chips and walnuts today but.. the possibilities are endless. Peanut butter chips with chopped peanuts, milk chocolate with almonds, white chocolate with macadamia nuts, etc
