Oven Roasted Michigan Asparagus with Swiss Cheese & Ham Sauce

Oven Roasted Michigan Asparagus with Swiss Cheese & Ham Sauce :)
I roasted a turkey breast instead of using the chicken breast like I usually d, so tonight I just served the sauce over the asparagus :)


Deconstructed Chicken Cordon Bleu with Asparagus 


Need a hearty, delicious dinner in a hurry? Chicken breasts and Asparagus on a bed of Noodles topped with a wonderful Swiss Cheese and Ham Sauce.


Ingredients:
6 chicken breasts, boneless/skinless
2 teaspoons butter or olive oil
garlic salt & pepper to taste
6 slices deli ham, cut into thin ribbons
6 slices Swiss cheese, diced
1 can cream of chicken soup
1 cup sour cream
up to 1/2 cup half and half
1/2 cup white wine*
1 teaspoon garlic powder
1 teaspoon cracked black pepper
1# asparagus
1# bag wide noodles


*Chicken broth may be substituted for the white wine.


Directions:
1) Put a large pot of salted water on to boil.
2) Trim asparagus stalks and toss them into boiling water.. cook just until tender. Use a slotted spoon to remove them from the pot. Cover & set aside. Do Not Drain Water from the pot.
3) Season the chicken breasts with garlic salt & pepper. In a large skillet melt butter and saute the chicken breasts.
4) Bring the water back up to a boil and cook the noodles as directed.


5) In a large saucepan whisk together sour cream, cream of chicken soup & white wine. Add garlic powder & pepper and bring to a simmer over medium heat. Add Swiss cheese, stir until melted. Stir in ham ribbons.. use the half/half to thin sauce your favorite consistency. Remove from heat, cover and set aside. (It will thicken as it sits.)


6) Drain the noodles and plate them on a large platter. Arrange the asparagus spears on top and place the chicken breasts over the asparagus. Generously ladle the Swisss cheese sauce over top and serve with a nice loaf of crusty French bread. I put the extra sauce into a gravy boat along side the platter on the table for those that really like extra sauce.
