Pink Waldorf Salad


It wouldn't be a Harvey holiday without the Waldorf Salad :) Thank goodness I remembered the bowl, lol!


Ingredients: 
3# Macintosh or Cortland apples, unpeeled & cut into bite-sized pieces
1 large container fat free Cool Whip*
1 jar maraschino cherries, reserve liquid & cut cherries in half
1# red or green seedless grapes, cut in half
1/2 to 1 cup Miracle Whip, no substitutions
10x sugar, start with 1/2 cup and adjust to your "sweetness" preference
1 cup pecans, broken
1 teaspoon vanilla
a good shake of salt


Directions:
Wash, core & cut apples into a large bowl. Add in some of the cherry juice to keep apples from browning. Add the cherries, pecans & grapes to the bowl.
Combine the Cool Whip, Miracle Whip, vanilla, salt & 10x sugar in a separate bowl. Pour over the apple mixture and mix until well combined. Adjust the thickness & color of the sauce (by adding more cherry juice) to your liking. Chill 3 to 4 hours & serve.
* You can use real whipped cream for the sauce but it adds major calories and the sauce on any leftover salad will break quicker.
You can also add diced cooked chicken to this for an amazing Waldorf Chicken Salad :)
