I first tried this recipe over 30 years ago when I bought a Toastmaster pizzelle iron. It quickly replaced the one I had been using.. the cookies are so light and tasty. BTW, there really are 3 kinds of fat in this recipe: oil, butter/margarine & shortening... it's not a typo :)
Servings: Although the recipe states that it makes 6 dozen I only get 3 1/2 dozen from my new pizzelle iron.

6 eggs
1/4 cup vegetable oil
1/4 cup butter/margarine, softened
1 1/2 cup sugar
1/4 cup shortening
2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 teaspoon flavoring (vanilla, anise, almond, orange extract)
2-2 1/2 cups flour
Directions:
Preheat the pizzelle iron.
Blend ingredients together, adding one at a time. Drop approximately a heaping teaspoon of batter into the center of each cookie section.
Close lid and allow to cook 45-60 seconds or until lightly browned.
Allow to cool on a wire rack or towels.
Dust with powdered sugar.
Cookies may be served flat or rolled into a cylinder. Cookies must be hot during rolling and held in shape until cool.
If you mold a hot cookie around the base of a glass it makes a great "bowl" for a sundae or parfait.
You can also stuff the rolled cylinders with cannoli filling for a delicious treat.
Makes 3 to 6 dozen.
