Pumpkin Streusel Muffin





Pumpkin Streusel Muffins made with LakeShore Pumpkin Muffins:


Ingredients:
3 cups flour, unsifted
1/2 cup brown sugar
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons pumpkin pie spice*
1/4 teaspoon ginger
1 can (15oz) pumpkin
2 tablespoon molasses
2 eggs
1 stick (1/2 cup) butter, melted
Streusel


Directions:
Preheat oven to 350 degrees.  In a large bowl whisk together eggs, butter, pumpkin, sugars, molasses, and spices. Add dry ingredients and stir just until combined. Fill muffin cups to 2/3 full. Sprinkle streusel over top. Bake at 350 degrees for 25 to 30 minutes.


Streusel:
5 tablespoons flour
5 tablespoons sugar
5 tablespoons oatmeal (not instant)
1/2 cup walnuts, finely chopped
3/4 teaspoon cinnamon
3 tablespoons butter
Cut in butter until mixture resembles coarse crumbs. Set aside.


*Pumpkin pie spice:
4 tablespoons ground cinnamon
4 teaspoons ground nutmeg
4 teaspoons ground ginger
3 teaspoons ground allspice
