Schnitzel with Spaetzel
Super simple...
Directions:
Bring a big pot of chicken broth (or heavily salted water) to a boil... add Spaetzel or use Kluski Noodles if you can't find Spaetzel ~ cook according to pkg directions. I use chicken broth so I don't add any extra seasoning...s except for some snipped chives.
Meanwhile, pound 4 pork cutlets (you can also use veal or chicken) until they are 1/4 inch thick. Mix 1/2 c flour, 1/2 c corn meal, salt & pepper together in a bowl. Whisk together 2 eggs, 1/2 milk & 2 teaspoons lemon juice ( fresh is best). Dip pork in egg mixture and then into flour mixture. Set aside while you heat up 3-4 tablespoons oil in a frying pan ... add cutlets and fry them for about 5-6 minutes on each side (or until crisp & golden brown). Remove cutlets from the pan, leaving the drippings in pan... Now make a brown gravy in the pan. Add some very thin slices of lemon & the rest of the juice from the lemon. Cook until the lemon slices have softened.
Plate the noodles/cutlets & top with the gravy...Yummm :)
