Sun Dried Tomato Spread


Ingredients:
1 bag (3.5 to 4 oz) sun dried tomatoes w/Italian basil
1 can (14.5 oz) diced tomatoes w/roasted garlic & basil
1 can (6 oz) tomato paste
4 tablespoons chopped fresh basil
1 1/2 heaping tablespoons minced garlic
1/2 cup grated Pecorino Romano cheese
3 tablespoons chopped onion
1/4 cup balsamic vinegar
1/8 cup red wine
1/2 cup olive oil
1 teaspoon sugar
salt & pepper to taste


Directions:
Put the sun dried tomatoes, olive oil, vinegar, wine in food processor/blender and pulse until rough blended.
Add tomato paste, basil, onion, garlic, diced tomatoes, sugar and process until blended.
Pulse in cheese until well incorporated.
Adjust seasonings ~ add salt & pepper to taste.
Store in fridge.
