Tomato Sauce


Sauce for Tomato Pie and regular pizza too...(before adding the roasted tomatoes).
It has taken me 6 years of searching the internet and combining recipes to finally get it almost as good as the real thing. Mmmmm smells so good!


Ingredients:
6 Roma tomatoes
1 ~ 28 oz can crushed tomatoes 
1 ~ 6 oz can tomato paste 
4 large cloves fresh garlic, minced
1 tablespoon basil
1 tablespoon oregano
1 1/2 tablespoons balsamic vinegar
2 1/2 tablespoons sugar


Directions:
Preheat oven to 365. Slice tomatoes in half, season with salt & pepper, drizzle with olive oil and roast in the oven for 35 minutes.
Meanwhile, place the remaining ingredients in a non-aluminum, heavy bottom pan and simmer until thickened. 
When roasted tomatoes are done add them into sauce, continue to cook down & mix them in until there are no large chunks. 
This makes enough sauce for 3 large round tomato pies/pizzas and the sauce freezes well too.


To make Tomato Pie: Preheat oven to 450. Make or buy a ball of pizza crust dough. Roll dough out. Sprinkle cornmeal on a pizza stone/pan and lay dough on top. Spread a really thick layer of sauce on top. Bake at 450 degrees for 15-25 minutes, until crust is golden and the center is cooked through.
*Some pizza shops add a light sprinkle of Parmesan cheese over the pie before baking.
