Double Batch of Banana Oatmeal Bread/Muffins :)

- 1 cup sugar
- 1/4 cup milk
- 4 large ripe bananas
- 1 heaping teaspoon baking soda
- 1 stick butter/margarine room temperature
- 2 eggs, xl or jumbo
- 2 cups four
- 1/2 teaspoon salt
- 1 1/2 teaspoons vanilla
- 3/4 cup quick oats
- 1 cup chopped nuts, pecan or walnuts work best
Directions:
- Preheat oven to 350
- Spray baking pans with no stick spray
- Place all ingredients in a large stand mixer bowl. Start mixer on low and increase speed as flour is incorporated. Mix just until everything is blended.
- Fill muffin tins 7/8 full, bread pans 3/4 full.
- Bake at 350 for 15-20 minutes for muffins, 30 minutes for mini-loaves & 1 hour for regular loaf pans.
