Double Batch of Banana Oatmeal Bread/Muffins :)

Ingredients:
  • 1 cup sugar
  • 1/4 cup milk
  • 4 large ripe bananas
  • 1 heaping teaspoon baking soda
  • 1 stick butter/margarine room temperature
  • 2 eggs, xl or jumbo
  • 2 cups four
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla
  • 3/4 cup quick oats
  • 1 cup chopped nuts, pecan or walnuts work best


Directions:
  1. Preheat oven to 350
  2. Spray baking pans with no stick spray
  3. Place all ingredients in a large stand mixer bowl. Start mixer on low and increase speed as flour is incorporated. Mix just until everything is blended.
  4. Fill muffin tins 7/8 full, bread pans 3/4 full.
  5. Bake at 350 for 15-20 minutes for muffins, 30 minutes for mini-loaves & 1 hour for regular loaf pans.
