Black Beans & Rice

Ingredients: 
1# black beans, picked & rinsed
1/4 cup olive oil
2 onions, chopped
1 shallot, chopped (or use more onion)
2 bell peppers, (red or green), chopped
5 cloves garlic, minced
1 1/2 teaspoon oregano
1 tablespoon ground cumin
1 teaspoon paprika
1/2 teaspoon tumeric*
5 threads Mexican saffron*
1/2 teaspoon garlic powder
1/4 cup white wine ( or use wine vinegar)
1 tablespoon garlic pepper
1/4 teaspoon cayenne pepper (adjust to taste)
1 teaspoon Frank's Hot sauce (adjust to taste)
1 1/2 cups Uncle Ben's Instant Brown Rice


Directions:
Pick beans, rinse well and put in a large pot. Add 8 cups water and bring to boil. Boil 4 minutes, then cover and reduce heat to simmer for 1 hour. You can skip this step if you soak beans overnight.
Drain & rinse the beans. 
Place beans back into pot and add 8 more cups of water.
Saute the onions & peppers in the olive oil. Once onions are translucent add the garlic & oregano ~ being careful not to burn the garlic.
Add onion mixture and all of the other ingredients to the bean pot. 
On medium heat bring beans to a boil, then reduce heat, cover and simmer until the beans & rice are done (about 30 minutes).


You can also make this in a CrockPot.. Place all ingredients into the crockpot. Cover and cook on low for 8 hours. Very important to make sure you soak the beans overnight first.


It makes a lot ~ but freezes really well.
