Meatballs with Mushroom Gravy

1 pound ground beef 1/4 cup bread crumbs (dry) 1 egg, beaten 2 Tbsp. finely chopped onion 1/4 tsp salt 1/4 tsp pepper 1 can of cream of mushroom soup 1 soup can full of milk Mix all ingredients together and form into small balls about 1 1/2 inches in diameter.  Bake at 400° for 10 -13 minutes. This makes about 40 meatballs. Stir soup and milk together and pour over the cooked meatballs. Bake for about an hour at 300°.

Homemade Corn Dogs

1 cup all-purpose flour 1 cup yellow cornmeal 1 tablespoon granulated sugar 3 teaspoons baking powder 1 teaspoon salt 1 1/2 teaspoons chili powder 2 eggs 1 cup milk 1/4 cup vegetable oil oil or shortening for deep frying 1 pound hot dogs, about 10 wooden skewers In a mixing bowl, combine flour, cornmeal, sugar, baking powder, salt and chili powder. In another bowl, beat the eggs with milk and the 1/4 cup of oil. Stir egg and milk mixture into dry ingredients and whisk together until batter is smooth. Heat oil in the deep fryer to 360°, or until it’s just about to smoke. You want the oil to be very hot so that when the corn dog is put into the oil it begins to fry immediately. Lightly flour each weiner. This makes the batter stick to the wieners. Insert a wooden skewer or popsicle stick into each hot dog, to make a “handle” for the hot dogs. Oatmeal Cookies

1 cup butter, softened 1 cup white sugar 1 cup packed brown sugar 2 eggs 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 1 1/2 teaspoons ground cinnamon 3 cups quick cooking oats 1.In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour. 2.Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheet. 3.Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Spicy Sweet-Ribs and Sauce

Ingredients 2  (16-ounce) cans pinto beans, drained 4  pounds  country-style pork ribs, trimmed 1  teaspoon  garlic powder 1/2  teaspoon  salt 1/2  teaspoon  pepper 1  medium onion, chopped 1  (10.5-ounce) jar red jalapeƱo jelly 1  (18-ounce) bottle hickory-flavored barbecue sauce 1  teaspoon  green hot sauce Preparation Place beans in a 5-quart electric slow cooker; set aside. Cut ribs apart; sprinkle with garlic powder, salt, and pepper. Place ribs on a broiling pan. Broil 5 1/2 inches from heat 18 to 20 minutes or until browned, turning once.
