Fresh Herb Batter Bread

*You can omit the herbs for a plain bread which is awesome with soups and stews!* 3 C. All-Purpose Flour 1 T. Sugar 1 t. salt 1 Package Active Dry Yeast 1 1/4 C. Very Warm Water (120-130 Degrees) 2 T. Snipped Fresh Parsley 2 T. Shortening 1 1/2 t. Snipped Fresh OR 1/2 t. Dried Rosemary 1/2 t. Snipped Fresh Thyme OR 1/4 t. Dried Thyme Butter or Margarine, Softened Mix 2 Cups of the flour, the sugar, salt and yeast in large bowl.  Add water, parsley, shortening, rosemary, and thyme.  Beat on low speed 1 minute, scraping bowl frequently.  Beat on medium speed a1 minute, scraping bowl frequently.  Stir im remaining cup of flour until smooth.  Scrape batter from side of bowl.  Cover and let rise in warm place 35-40 minutes or until double.  Grease loaf pan, 9x5x3 inches.  Stir down batter by beating 25 strokes.  Smooth and pat batter in loaf pan with floured hands.  Cover and let rise about 30 minutes or until double.  (Do...

Pan Center Cut Porkchops

4 Center-Cut Pork Chops, about 1" Thick 1 t. Dried Thyme  1 t. Salt  1 T. Oil  Sprinkle the thyme and salt on both sides of the chops.  Let sit for about 30 minutes.  Spread the oil over the bottom of a large iron skillet over medium heat.  Place the chops in the pan and cook slowly, lowering the heat if necessary.  Cook 4 to 5 minutes on each side.  Cover, turn off the heat and let chops sit for 8-10 minutes. Hamburger Casserole

2 Pounds Ground Beef 1/2 Cup Finely Chopped Onion 1 t. Seasoned Salt  1/2 Cup Sour Cream  1 T. Worcestershire Sauce  1 Pound Potatoes, Cooked and Mashed 1 Cup Grated Cheddar Cheese  Preheat oven to 375.  Prepare the potatoes.  Cook the ground beef and onion over medium heat until the beef is browned and the onion is soft, but do not brown the onion.  Drain off the fat.  Add the seasoned salt, sour cream, and Worscestshire sauce, stirring to mix well.  Press the beef mixture into a 2-quart casserole dish.  Spread the mashed potatoes over the meat and then top with cheese.  Bake for 15-20 minutes. Stir-Fry Pepper Steak

Serve over rice. 2 T. Oil or 1/2 stick Margarine 1 t. Garlic Salt 1 Pound Round Steak, cut into thin strips 2 Medium Green Peppers, seeded, and cut into strips 1 C. Sliced Mushrooms, cooked Put the oil in a skillet, sprinkle in the garlic salt, and place over medium heat until just hot. Add the steak, green peppers and mushrooms to the skillet. Stuffed Bell Peppers

6 Medium Green Peppers              1 Cup Ketchup 1 Pound Lean Ground Beef           1 Teaspoon Mustard 1/2 Cup Chopped Onions              1 Teaspoon Seasoned Salt 1/2 Teaspoon Garlic Salt              1 Cup Cooked Rice Preheat oven to 350 degrees.  Wash the peppers and cut off the tops.  Chop up the tops, discarding the stems.  Rinse the insides of the peppers and remove the seeds.  In a bowl, mix all the other ingredients together well.  Spoon the meat mixture into the peppers.  Pour 1 cup of the water into a baking pan and place the peppers in it.  Cover the pan with foil and bake for 45 minutes. *Mama Dip's Kitchen Cookbook, page 96

Healthy Changes and the Effects

We are on day 4 of our new healthy diet and let me tell you how different I feel!  I have more energy and can actually recall more information then I could 4 days ago!  I cannot explain how much better I already feel and how I look forward to tomorrow's menu!  It has been so much fun getting into the kitchen and opening the cookbook to try a new recipe and prepping dinner with my children!  I hope that I can teach the kids that it's never too late to eat healthier!

Healthy Changes Means Healthy Living!!

Do you remember my last post about Carlie C's?  Well, I didn't mention the lifestyle changes we're making here at home!!  My sister and I were talking and it seems as though she is having symptoms of Angina and I Googled how to reverse cholesterol damage and found that it is quite possible with the right diet.  After reading the information I knew would be beneficial for the family to try something new since what we were doing wasn't working! I am not a nutritionist nor am I a Doctor, however, I am a mom of four and admit that I got caught up in the "how quick can I cook a meal" phase.  I say phase because I wasn't taught how to cook that way.  See, both of my grandmothers always cooked from scratch and they used fresh ingredients from either their garden, livestock or the grocery store/butcher.  It wasn't until I was in my early twenties that I had to come up with quick meals that were budget friendly ($50.00 for 3 people that needed to last for 2 w...

I found a new grocery store!!

Since we moved back in May the kids started a new school and I just happened to pass a Carlie C's IGA on the way to pick up my daughter who wasn't feeling well.  I wanted to stop on the way back through, but she just wanted to go home.  We went home and I got online to do some research about the company and see what kinds of specials they had this week.  Well, after the other kids got home from school we went to Carlie C's.  When I first walked in I was amazed that they sold local produce and their prices were awesome!  As I continued shopping I couldn't help think why I should shop anywhere else and then I saw the meat department!!  I was so elated to see a meat department that still cuts and grinds their meat in the store!!  I have been so disappointed seeing all the other chain stores pulling away from this practice and it completely saddens me.  For one, I have no idea where my meat comes from and two, I don't know the conditions of where my m...
